{"id":57,"date":"2017-01-10T16:17:05","date_gmt":"2017-01-10T16:17:05","guid":{"rendered":"http:\/\/homemademacaroni.com\/?page_id=57"},"modified":"2017-01-13T14:59:29","modified_gmt":"2017-01-13T14:59:29","slug":"spicy-macaroni-cheese-recipe-1","status":"publish","type":"page","link":"https:\/\/homemademacaroni.com\/?page_id=57","title":{"rendered":"Spicy Macaroni &#038; Cheese Recipe #1"},"content":{"rendered":"<p style=\"text-align: center;\">Spicy jalape\u00f1o peppers, red onion and Mexican spices all merge with the macaroni, plum tomatoes and cheese sauce to\u00a0 and bring you this recipe with a taste that\u2019s South of the Border<\/p>\n<p style=\"text-align: center;\">Recipe makes 8 servings.<\/p>\n<hr \/>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1 \u00bd cups finely chopped red onion<\/li>\n<li>3 large garlic cloves, minced<\/li>\n<li>2 tablespoons minced pickled jalape\u00f1o chilies, or to taste<\/li>\n<li>1 teaspoon ground coriander<\/li>\n<li>1 \u00bd teaspoons ground cumin<\/li>\n<li>1\/2 stick (1\/4 cup) unsalted butter<\/li>\n<li>1\/4 cup all-purpose flour<\/li>\n<li>4 cups milk<\/li>\n<li>1 28-ounce can plum tomatoes, drained well with the tomatoes finely chopped<\/li>\n<li>\u00bd teaspoon cayenne if desired<\/li>\n<li>1 pound elbow macaroni<\/li>\n<li>1 \u00bd cups coarsely grated Monterey Jack (about 6 ounces)<\/li>\n<li>1 \u00bd cups coarsely grated extra-sharp Cheddar (about 6 ounces)<\/li>\n<li>1 \u00bd cups bread crumbs<\/li>\n<li>1 1\/3 cups freshly grated Parmesan (about \u00bc pound)<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li>In a large heavy saucepan cook the onion, the garlic, the jalape\u00f1os, the coriander, and the cumin in the butter over moderately low heat, stirring, until the onion is softened.<\/li>\n<li>Stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking, bring the liquid to a boil, whisking, and whisk in the tomatoes.<\/li>\n<li>Simmer the mixture for 2 minutes and add the cayenne and salt and pepper to taste.<\/li>\n<li>In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture.<\/li>\n<li>Stir in the Monterey Jack and the Cheddar and transfer the mixture to a buttered 9\u201d by 13\u201d shallow baking dish.<\/li>\n<li>In a bowl stir together the bread crumbs and the Parmesan cheese.<\/li>\n<li>Sprinkle the mixture evenly over the macaroni mixture, and bake the macaroni and cheese in the middle of a preheated 375\u00b0 oven for 20 to 25 minutes, or until it is golden and bubbling.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Spicy jalape\u00f1o peppers, red onion and Mexican spices all merge with the macaroni, plum tomatoes and cheese sauce to\u00a0 and bring you this recipe with a taste that\u2019s South of the Border Recipe makes 8 servings.
