Saut\u00e9ed onions and mushrooms are complimented by the rich cheddar cheese.<\/p>\n<p style=\"text-align: center;\">Recipe makes 6 To 8 servings.<\/p>\n<hr \/>\n<h3>Ingredients<\/h3>\n<ul>\n<li>16 ounces uncooked macaroni<\/li>\n<li>1\/2 cup raw sunflower seed kernels (Shelled salted sunflower seeds add a saltier crunch to this recipe)<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>3 tablespoons butter<\/li>\n<li>1 small chopped onion<\/li>\n<li>1 cup sliced mushrooms<\/li>\n<li>4 cups grated cheddar cheese<\/li>\n<li>1 teaspoon nutmeg<\/li>\n<li>1 teaspoon paprika<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>Coarse ground black pepper to taste<\/li>\n<li>3 cups dry bread crumbs<\/li>\n<li>2 tablespoons butter \u2014 melted<\/li>\n<li>1\/2 chopped red bell pepper sliced into thin rings<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li>Heat the oven to 350F.<\/li>\n<li>Toast sunflower seeds in oil in a skillet until golden and season with a sprinkle of salt.<\/li>\n<li>Boil macaroni in lightly salted water for 6 to 7 minutes. Macaroni should still be firm.<\/li>\n<li>In the same pan used to toast the sunflower seeds, saut\u00e9 the onions in the butter until light golden in color.<\/li>\n<li>Add mushrooms and saut\u00e9 for another 4 minutes.<\/li>\n<li>Stir all ingredients together well and spoon into a greased baking dish.
